Spiced Pear Simple Syrup for Your Holiday Cocktails

Ingredients
3-4 pears cut into 1-inch chunks
1.5 cups water
3/4 cup sugar
2 cinnamon sticks
anise stars for garnish
Ingredients
1) add all ingredients to a saucepan, boil & stir
2) reduce heat to a simmer and cook with the lid on for 30 mins
3) remove from heat, allow to cool for 15 minutes.
5) strain the spiced pear simple syrup with a colander into a bowl, removing pears and cinnamon sticks
6) strain the syrup a second time with a cheesecloth or fine sieve
7) pour into container and chill before serving
8) add 1/2 oz of pear simple syrup to a champagne glass and top it off with your favorite sparkling beverage
9) garnish with anise star
Tips: refrigerate for up to two weeks. If you like a more tart flavor you can add a 1/2 oz of freshly squeezed lemon juice to each cocktail to cut the sweetness level. The leftover pears can be used to make muffins, cakes, or pies!
