How to make Vegan Blueberry Pancakes

Do you love blueberry pancakes? This recipe for vegan blueberry pancakes is so delicious you won’t believe they are vegan when you take a bite. These pancakes are fluffy & light and will melt in your mouth with a little vegan butter and blueberry topping.

Ingredients
vegan butter (for cooking the pancakes in the skillet)
1 cup flour
2 tablespoons brown sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup canned coconut milk
1 tablespoon apple cider vinegar
1/2 tsp vanilla extract
1/2 tsp maple syrup
2/3 can blueberry pie filling

Instructions
1) combine flour, brown sugar, baking powder & salt into a bowl and whisk
2) add coconut milk, apple cider vinegar, vanilla extract & maple syrup and stir until combined
3) let the batter sit for 5-10 minutes until tiny bubbles form
3) cook each pancake with vegan butter in a skillet & set them aside to cool
4) serve with blueberry pie filling, mixing in some maple syrup to thin the filling out as needed

Tips: spread vegan butter over pancakes before adding the blueberries, if your coconut milk is separating in the can you microwave the milk for 30 seconds in a glass container & give it a stir to help combine it. You may need to rinse off your skillet between pancakes if you notice the butter is getting too brown.
