On a hot summer day, nothing tastes better than a cool refreshing spoonful of homemade sorbet. You can make sorbet from so many different types of fruits. This particular recipe is for honeydew melon fruit sorbet, one of my favorites.

You will not believe how easy it is to make this sorbet! It takes only a few moments to cut up the fruit, you freeze the chunks and then blend them with a small amount of lime juice and sugar! So easy! You can mix in other types of fruit with the honeydew and you can even use honey if you prefer. If your honeydew is ripe enough you may not even need to add sugar, since ripe melons are quite sweet on their own. Experiment! Try adding fresh mint or basil to it! You could add minced lemongrass or ginger, anything you love! The sky is the limit with this recipe. Looking for more delicious summer recipes? Try this amazing recipe for watermelon avocado salsa!

Ingredients

1 honeydew melon
2-3 tablespoons of lime juice
2-3 tablespoons of simple syrup

Instructions

1) cut up the honeydew into small chunks and lay them flat on a shallow casserole dish or baking sheet
2) freeze chunks for 5 hours
3) take frozen chunks and puree in a food processor. Add a small amount of the lime juice and sweetener to help soften as they puree
4) pour all of the pureed honeydew into a large bowl
5) stir in remaining simple syrup and lime juice until well combined.
6) pour into a glass bowl and place in the freezer for 1 hour
7) scoop the sorbet and enjoy it!
8) garnish with fresh herbs such as mint or basil

Tips: depending on what kind of blender or food processor you have you may need to make several small batches.  I recommend putting the fruit in first and then slowly adding equal parts simple syrup and lime juice until it’s well blended and slightly wet.  If you love citrus you can add extra lime to create a very tropical and tart sorbet.  If you do not like lime you can certainly substitute water and go citrus-free with the recipe.  Get creative and try whatever flavors you love!
